Huevos rancheros, or ranch-style eggs, is the kind of breakfast that keeps you going until well past lunchtime. Corn tortillas are warmed in a little oil until crisp at the edges, topped with sunny fried eggs and smothered in a warm ranchero sauce made from tomatoes, onion, garlic and jalapeño. Add beans, avocado and cheese and you have a complete meal on one plate.

Why this recipe works

  • A 10-minute blender sauce. Blending the sauce ingredients raw and then simmering them in a hot pan gives a smooth, deeply flavored sauce without roasting anything.
  • Lightly fried tortillas. A quick fry in a thin film of oil makes the tortillas pliable in the middle and crisp at the edges, so they hold up under the sauce.
  • Eggs cooked your way. Fried eggs are traditional, but scrambled or poached eggs work just as well.

How to build the plate

Start with one or two tortillas per person, add a spoonful of warm refried or black beans, then the eggs. Spoon the sauce around and over the whites, leaving the yolks showing, and finish with cheese, cilantro and avocado.

Make it a brunch spread

Serve with a bowl of fresh guacamole, sliced fruit and plenty of hot coffee. Leftover ranchero sauce is also delicious spooned over a burrito bowl.

FAQ

How spicy is the sauce?

With one jalapeño and its seeds removed, it is mild to medium. Keep the seeds in, or add a second chile, for more heat.

Can I use flour tortillas?

Yes, though corn tortillas are traditional and keep the dish gluten-free. Warm flour tortillas in a dry pan rather than frying them.

Ranchero sauce

For serving

Conversions are rounded for convenience. For baking, use the original measurements where possible.

Instructions

Make the sauce

  1. Blend the tomatoes, onion, garlic, jalapeño, cumin and salt until smooth.

  2. Heat 1 tablespoon of oil in a small saucepan over medium-high heat. Pour in the sauce (it will splatter) and simmer for 8 to 10 minutes, stirring now and then, until slightly thickened and darker in color. Keep warm.

Fry the tortillas and eggs

  1. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Fry the tortillas one or two at a time for about 30 seconds per side, until softened with crisp edges. Drain on paper towels, adding a little more oil as needed.

  2. Reduce the heat to medium and add the remaining oil. Crack in the eggs and fry for 2 to 3 minutes, until the whites are set and the edges are lightly crisp. Season with a pinch of salt.

Assemble

  1. Overlap 2 tortillas on each plate and spread with warm beans. Top with an egg.

  2. Spoon the ranchero sauce over the whites, then top with cheese, avocado and cilantro. Serve with lime wedges.

Notes

  • Fire-roasted tomatoes give the sauce a smoky, slow-cooked flavor in very little time. Regular diced tomatoes work too.

Tips

  • Keep the fried tortillas warm in a low oven, 200°F, while you cook the eggs.

Substitutions

  • Cheese: cotija, feta or sharp cheddar all work.
  • Beans: pinto beans, mashed with a fork and a splash of their liquid.
  • Dairy-free: skip the cheese and add extra avocado.

Storage and reheating

  • Refrigerate leftover ranchero sauce for up to 4 days or freeze for up to 3 months. Cook the eggs and tortillas fresh.
